I give the carp away to folks my dad works with. The gar have a backstrap, sort of like deer. You need tin snips to get through the skin, but after that, you have 2 boneless filets. I like them fried.

Gar can be wrapped in cheesecloth and boiled with a crab boil bag then used in any recipie used with lump crab meat. Baked with bread crumbs is also good. I fry most of it though. Rays are allot more work. If I am going bowfishing for sharks I take the ray meat, organs and blood and put them in 3 5 gallon buckets in a cooler and try to keep them just cold enough that they still spoil, but not so hot I can't be around the cooler. If I am going to eat them I skin them then soak them in saltwater. I then remove the tendons between the meat sections then grind them up for burger in dirty rice or fish burgers or I take them and stri fry them in beer and cajun seasoning.
