I found this on-line and it turned out great, a couple of my hunting buddies have tried it and loved it as well.
Take 2 Goose breast (I am sure it would work with duck as well) flatten them using a meat hammer, be sure to put plastic wrap over them while you are doing it. After you have them flat marinate in your favorite marinade for at least an hour, I used A1 Cajun Flavored. Take them out of the marinade and lay on a cookie sheet or what ever you are cooking them on. Put Pepper Jack Cheese on top of each breast, I bought the already sliced type for sandwiches and used a piece and a half on each breast. Roll the breast around the cheese. It should look like the inside of a HO-HO. Wrap the breast with bacon. Cook for 30 minutes at 325. It will still be a little red inside if you don't want them to be red try 40 minutes. It is really good. You can also use cream cheese if you are not a pepper jack fan.
