I know a guy that cooks them and says they are delicious. If you skin it out, I'll tan it for you, but no guarantees on how it comes out.

Just don't let her see it until it's all skinned & ready to cook. Then it will be that big ole rabbit.

Here is a recipe for ground hog / possum; After cleaning the critter wash it thoroughly and freeze it for three to four days to make it tender and to ensure that any bacteria in its body are killed. Put the critter in a roasting pan, season it with salt and pepper, add one cup of water and the juice from one lemon. Bake the critter for 15 minutes at 400 degrees, turn it once and cover it before baking it an additional 90 minutes at 350 degrees. Vegetables sholud be cooked seperately. As an alternative, skinned and seperate portions can be preboiled and then dusted in a seasoned flour and fried in hot oil until golden brown. Must be preboiled to eliminate bacteria.

Groundhogs what are they good for? Absolutley Nothing...........Huh............say it again! Groung Hog Pine smoked recipe: Skin and prep just like a rabbit. Cut a fresh piece of pine 22 inches long and 7inches round. Season groundhog with black pepper, crushed oregano, olive oil, and chopped garlic. Tie the legs together around the pine log so it "hugging" the log. Cook at 375 for 35 minutes or until juices flow clear when poked with a fork. When done untie the groundhog and discard. Eat the pine log, garnish with lots of beer.
