Although I like to catch those big spring rock, they aren't my favorite for eating. This recipe was really good though, definitely good on those big hunks of fillet from 30-40" fish.
Place cleaned fillets in a greased baking dish. Sprinkle with thyme, oregano and parsley. Cover fish with grated cheddar and mozzeralla cheese (or whatever cheese you like) and ground up cracker crumbs.
On the stove sautee 1-2 chopped onions in 2 Teaspoons olive oil. Add salt and pepper to taste. After onions are translucent, slowly mix in a half cup of milk. Do not boil. When hot, pour mixture over fish and cheese in baking pan. Cook uncovered in oven at 400 degrees for 25 minutes, serve over rice.
