Decided to try my hand at making Goose and Duck breast prosciutto this waterfowl season with a recipe that I got. And it turned out awesome! Sliced thin on some triscuits with cheese, olive or whatever else you wanted... After the seasoning period they cured in the cheesecloth in the fridge and turned out perfect. Attachments:
